Prepared Mixes RC Gravy Mixes Red Eye Gravy Makes 1 cup 1 cup prepared RC Pork Gravy Mix 1 Tbsp. strong coffee, prepared 2 Tbsp. crisp bacon, finely chopped Directions: Fry bacon. Prepare RC Pork Gravy. Add bacon and coffee to gravy mix and simmer 2 minutes. Serve over ham. RC Demi-Glace Sauce Bordelaise Sauce Mix Makes 2 cups 2 cups prepared RC Demi-Glace Sauce Mix 2 oz. dry red wine 1 shallot, chopped fine 1/2 tsp. peppercorns pinch of thyme 1/2 tsp. International Spice Ground Bay Leaves Directions: Add all the above ingredients into a sauce pan. Heat to a simmer and cook 10 minutes. Strain through a sieve. Serve. RC Instant Food Thickener Mix 1 Tbsp. rice wine vinegar 1 tsp. honey Directions: Whip RC Instant Food Thickener into juice. Allow to stand 1 minute. Serve with desserts or over fruit.
Citrus Fish Sauce Yield 1+ cups 1/2 cup fresh orange juice 1/2 cup fresh grapefruit juice 2 tsp. honey 2 Tbsp. RC Instant Food Thickener Directions: Whip RC Instant Food Thickener into juice. Allow to stand 1 minute. Serve with or over fish.
RC Instant Pastry Cream Basic Pastry Cream Makes 1-1/2 - 2 quarts 1 package RC Instant Pastry Cream Mix 1 quart milk. Directions: Place 1 quart cold whole milk in bowl. Add Instant Pastry Mix. Using whip attachment, whip at low speed until dry ingredients are wet. Scrap bowl. Then whip at high speed approxiately 5 minutes. Use immediately. Variations: Coconut Cream 2 tsp. coconut extract 1/2 - 3/4 cup toasted coconut Add the extract and toasted coconut during the final minutes of mixing. Chocolate Cream 1/2 tsp. vanilla extract 6 Tbsp. coco powder Add extract and coco powder during the final minutes of mixing. Banana Cream 2 tsp. banana extract 2 mashed bananas Add extract and mashed banana during the final minutes of mixing. Double Cream 8 oz. heavy cream, whipped When pastry cream is completely mixed, gently fold in the whipped cream. Peanut Butter Cream 1/2 cup room temperature peanut butter Whip the peanut butter until fluffy. Add milk and whip to blend. Add the RC Instant Pastry Cream Mix and follow above directions.
RC Bavarian Mix Bavarian Parfaits Serves 4 1 cup of your choice of RC Bavarian Mixes 10 oz. ice water Directions: Add water to bottom of mixing bowl. Add choice of Bavarian Mix. Using whip attachment, whip slowly until dry ingredients are moist. Then whip at high speed approxiately 3 minutes or until fluffy. Spoon prepared mix into glass dishes. Chill 1/2 hour. Serve. Variations: Layer with choice of fruits, pie fillings or syrups. RC Mousse Mix & RC Whipped Topping Mix Mousse Pie Yield 9" pie 1 prepared cookie pie crust 1/4 cup of your choice RC Mousse Mix 2/3 cup RC Whipped Topping Mix 1 cup whole milk Directions: Add milk to bottom of mixing bowl. Add RC Mousse Mix and RC Whipped Topping Mix. Using whip attachment, whip slowly until dry ingredients are moist. Then whip on high speed until thick: approximately 2 minutes. Pour into pie crust or glass dishes. Chill for 1/2 hour. Serve. Variations: Add 1 Tbsp. of a flavored liquor or instant coffee for a very distinctive flavor. Chocolate Mousse Cake Frosting Yield: 5 cups 1 cup RC Whipped Topping Mix 1 cup ice water 4 Tbsp. RC Chocolate Mousse Mix Directions: Add water to bottom of bowl in electric mixer. Add RC Whipped Topping Mix and RC Chocolate Mousse Mix. Whip on low until dry ingredients are moist. Whip on high speed for 2-3 minutes until mixture is thick and firm. Serve immediately. Will hold and not weep at room temperature for hours. Variations: May substitute milk for water; however, the product must then be refrigerated.
