Low Sodium Recipes Low Sodium Chicken Vegetable Soup Makes 2-1/2 quarts 2 tsp. vegetable oil 6 oz. cooked chicken, small diced 1 carrot, peeled and small diced 1 parsnip, peeled and small diced 1 medium onion, small diced 1 rib celery, small diced 1 cup, peeled, cubed potato 4 oz. green beans, bias cut 1 tsp. garlic, chopped 1 Tbsp. chopped parsley 1/2 tsp. thyme 1 tsp. basil 1 tsp. oregano 1 bay leaf 1/4 tsp. ground pepper 4-1/4 tsp. RC Low Sodium Supreme Chicken Base 2 qts. water Directions: Heat the oil and sauté the vegetables and garlic. Add the remaining ingredients, mix well and simmer until potatoes are tender. Add cooked chicken, Adjust seasoning with ground pepper. Serve. Variation: Use 8-1/2 tsp. RC Very Low Sodium VLS Chicken Base Low Sodium Beef Barley Soup Makes 3 quarts 2 tsp. vegetable oil 3/4 lb. beef round, small diced 1/2 cup chopped shallots 2 ribs celery, small diced 2 carrots, small diced 3/4 lb. mushrooms, sliced 1 Tbsp. garlic, chopped 3/4 tsp. cumin 1 tsp. thyme 1 tsp. oregano 1 tsp. basil 1 bay leaf 2-1/2 qts. water 5 tsp. RC Low Sodium Supreme Beef Base 1 cup barley ground pepper Directions: Heat the oil and sauté the beef, shallots, celery, carrots, mushrooms, and garlic. Add the herbs and sauté for 3-5 additional minutes. Add the water, RC Low Sodium Supreme Beef Base and barley. Bring to a simmer. Simmer until the barley is tender. Adjust the seasoning with ground pepper. Serve. Variation: Use 10 tsp. RC Very Low Sodium VLS Beef Base Low Sodium Turkey Gravy Makes 1-1/4 cups 1 cup water pinch of chopped rosemary pinch of chopped sage pinch of chopped thyme 1 tsp. RC Low Sodium Supreme Turkey Base 2 Tbsp. RC Instant Food Thickener or flour ground peppercorns to taste Directions: Place water, herbs and RC Low Sodium Supreme Turkey Base in a saucepot. Simmer for 5-10 minutes. Add the RC Instant Food Thickener or flour and mix well. Puree the mixture and season with ground peppercorns. Serve.
